There is no better way to celebrate today than by serving the one you love a superfood breakfast, especially one that includes chocolate. These wonderful cakes include superfoods that have antioxidant boosting properties.
The first ingredient is whole grain oats. Oats contain soluble fiber which is important for bowel health and can actually help to decrease total cholesterol. They are also a good source of B vitamins, especially thiamine which is important for metabolism.
Strawberries, which make a great topping for these pancakes, are also a good source of soluble fiber. They also contain antioxidants . Antioxidants provide healthy cells against damage caused by free radicals. Cocoa is a super food that contains polyphenols, flavonols, and has a high antioxidant activity. In fact, when compared to other “superfood” powders, cocoa has the highest amount of polyphenols, flavonols and antioxidant activity. These antioxidants have shown to provide protective benefits against certain types of cancer and cardiovascular disease risk.
Although pancakes may seem like a complicated weekday breakfast, the batter can be ready to cook in 15 minutes or less (you can also make the batter the night before). Heat a non-stick griddle while you are preparing the batter so it is hot when the batter is ready.
These pancakes are especially good when topped with fresh or thawed from frozen strawberries (without added sugar) and a dusting of powdered sugar or maple syrup. Add a tablespoon of peanut butter for a protein boost if you love the combination of chocolate and peanut butter.

Whole Grain Cocoa Pancakes
- 1 cup old fashioned oats
- ½ cup skim or 1% milk
- 1/3 cup low fat plain greek yogurt
- ¼ cup cocoa powder
- 1 egg
- 1 Tbsp canola oil
- 2 tsp sugar
- ½ tsp baking powder
- Thawed frozen strawberries (without added sugar)
- Powdered sugar
- Greek yogurt
- Pure maple syrup
- Process oats in a blender or food processor until ground fine.
- Add milk and let sit for 10min.
- Add yogurt, cocoa, egg, oil, and sugar. Blend for 20-30seconds until creamy.
- Add baking powder and blend for 10 seconds.
- Cook batter over medium heat on a greased skillet.
- Serve with thawed berries or greek yogurt drizzled with pure maple syrup.
