This tasty peach vinaigrette salad dressing is great for hot summer days.
- 1 large fresh peach – pitted and chopped
- 3/4 cup oil (canola or olive oil)
- 1/4 cup raw apple cider vinegar
- 3 tablespoon honey
- 1/8 teaspoon nutmeg
- salt and pepper to taste
If the peach you’re using is very sweet, you may not need the honey.
To prepare the dressing, combine the chopped peach, vinegar, oil, nutmeg, honey (if using), and salt in a blender, and blend until completely smooth.
